Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¾ cup sugar
  • 2 tbsp lemon zest
  • ¼ cup lemon juice
  • 2 cups strawberries
  • 6 cones waffle cones

Instructions

  1. 1

In a medium saucepan, combine 2 cups heavy cream, 1 cup whole milk, and 3/4 cup sugar. Heat over medium, stirring, until sugar dissolves and mixture is warm, about 5 minutes.

  2. 2

Remove from heat and stir in 2 tbsp lemon zest and 1/4 cup lemon juice. Let cool to room temperature, then chill in refrigerator for at least 2 hours.

  3. 3

Meanwhile, hull and slice 2 cups strawberries. Mash them with a fork until chunky. Set aside.

  4. 4

Pour the chilled cream mixture into an ice cream maker and churn according to manufacturer's instructions, about 20-25 minutes, until it reaches a soft-serve consistency.

  5. 5

Fold in the mashed strawberries with a spatula, creating swirls. Transfer to a freezer-safe container and freeze until firm, at least 4 hours.

  6. 6

Scoop the ice cream into 6 waffle cones and serve immediately. If cones are not available, serve in bowls.
