Ingredients
- 8 oz rice vermicelli
- 8 oz shrimp, peeled and deveined
- 4 oz mushrooms, sliced
- 3 green onions, sliced
- 1 red chili pepper, thinly sliced
- 3 tbsp soy sauce

Soak the 8 oz rice vermicelli in hot water until pliable, about 10 minutes, then drain well.

Heat 2 tbsp oil in a wok or large skillet over high heat. Add the 8 oz shrimp and 4 oz mushrooms; stir-fry until shrimp turn pink and mushrooms soften, about 3 minutes.

Add the drained noodles, 3 tbsp soy sauce, and 1 sliced red chili; toss everything together for 2 minutes until noodles are heated through and evenly coated.

Stir in the 3 sliced green onions and cook for 1 minute more until fragrant. Serve hot.
