Ingredients
- 8 oz rice noodles
- 2 large eggs
- 2 cups mixed vegetables (e.g., bell pepper, carrot, cabbage)
- 8 oz protein (e.g., chicken, tofu, or shrimp)
- 3 tbsp soy sauce
- 2 tbsp vegetable oil

Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain.

Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add the 8 oz protein and stir-fry until browned and cooked through, about 5 minutes. Remove and set aside.
