Ingredients
- 1.5 lb chicken breast
- 2 medium bell peppers
- 1 large onion
- 3 stalks green onions
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 1 tbsp sesame seeds

Slice the 1.5 lb chicken breast into thin strips and season with a pinch of salt and pepper. Set aside.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken in a single layer and cook until browned and cooked through, about 5-7 minutes. Remove to a plate.

Add the remaining 1 tbsp vegetable oil to the skillet. Add the 2 sliced bell peppers and 1 sliced onion, and stir-fry until crisp-tender and slightly charred, about 4-5 minutes.

Return the chicken to the skillet. Add the 3 tbsp soy sauce and 1 tbsp sesame oil, and toss everything to coat. Cook for 1-2 minutes until the sauce is bubbling and everything is well combined.

Remove from heat. Sprinkle with the 1 tbsp sesame seeds and 3 chopped green onions. Serve hot over rice if desired.
