Ingredients

  • 2 lbs pork ribs (baby back or spare), cut into 2-inch segments
  • ½ cup hoisin sauce
  • 3 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tbsp sesame oil
  • 4 whole scallions, sliced thin
  • 1 whole cucumber, sliced into thin rounds or batons
  • 8 whole steamed buns (mantou or bao buns, warmed)

Instructions

    Heat 2 tbsp neutral oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Working in two batches, sear the rib segments without moving until edges brown, 2–3 minutes per side. Transfer to a plate.

    In a small bowl, whisk hoisin, rice vinegar, honey, and sesame oil until smooth.

    Return all ribs to the skillet, pour the sauce over, and toss to coat evenly.

    Cook over medium heat, stirring and turning ribs every 2 minutes, until sauce reduces and coats ribs glossily, 6–8 minutes.

    Serve ribs on steamed buns with cucumber slices and scallions alongside or stuffed inside.
