Ingredients
- 2 lbs pork ribs (baby back or spare), cut into 2-inch segments
- ½ cup hoisin sauce
- 3 tbsp rice vinegar
- 2 tbsp honey
- 1 tbsp sesame oil
- 4 whole scallions, sliced thin
- 1 whole cucumber, sliced into thin rounds or batons
- 8 whole steamed buns (mantou or bao buns, warmed)

Working in two batches, sear the rib segments without moving until edges brown, 2–3 minutes per side. Transfer to a plate.

In a small bowl, whisk hoisin, rice vinegar, honey, and sesame oil until smooth.

Return all ribs to the skillet, pour the sauce over, and toss to coat evenly.
