Ingredients
- 1 lb beef steak (such as sirloin or flank)
- 2 bell peppers
- 1 onion
- 8 flour tortillas
- 1 can (16 oz) refried beans
- ½ cup sour cream

Slice the 1 lb steak into thin strips and season with salt and pepper. Slice the 2 bell peppers and 1 onion into strips.

Heat 2 tbsp oil in a large skillet over high heat. Add the steak in a single layer and cook until browned, about 3-4 minutes per side. Remove from skillet.

In the same skillet, add the sliced peppers and onion. Cook over medium-high until softened and charred at edges, about 5-7 minutes.

Warm the 8 tortillas in a dry skillet or microwave. Heat the 1 can of refried beans in a small pot until hot, about 3 minutes.

Serve the steak and vegetables on tortillas with refried beans and a dollop of the 0.5 cup sour cream. Add chopped tomatoes or salsa if you like.
