Ingredients

  • 6 oz sushi-grade ahi tuna, diced
  • 2 cups sushi rice (cooked, seasoned, cooled)
  • 2 sheets nori (seaweed sheets)
  • 2 tbsp sriracha or gochujang
  • 3 tbsp mayo
  • ¼ cup tempura flakes (panko or crispy fried onion)

Instructions

    Mix sriracha and mayo in a bowl until smooth and bright orange.

    Fold diced tuna into the spicy mayo until evenly coated.

    Lay nori shiny-side down on a bamboo mat or clean surface.

    Spread 1 cup rice in a thin, even layer on the nori, leaving a 0.5-inch border at the top.

    Spoon half the spicy tuna mixture in a thin line across the rice, then sprinkle with half the tempura flakes.

    Roll tightly away from you, sealing with water on the nori border, then cut into 6 pieces with a wet knife.
