Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 can (15 oz) canned black beans, drained and rinsed
  • 1 cup salsa
  • 2 cups tortilla chips
  • 2 tbsp olive oil

Instructions

    Heat the 2 tbsp olive oil in a large skillet over medium-high heat. Add the 1 lb shrimp and cook until pink and opaque, about 3 minutes per side. Remove shrimp to a plate.

    Pour the 1 cup salsa into the same skillet. Cook over medium heat, stirring, until it thickens slightly and darkens in color, about 3 minutes.

    Return the shrimp to the skillet and toss to coat in the salsa. Cook until heated through, about 2 minutes.

    Warm the 2 cups rice and 1 can black beans together in a microwave or saucepan until hot, about 2 minutes.
