Ingredients
- 2 fillet salmon fillets
- 200 g rice noodles
- 1 cup edamame
- 1 medium cucumber
- 4 medium radishes
- 2 stalks green onions
- 3 tbsp mayonnaise
- 1 tbsp sriracha

Cook the 200g rice noodles in boiling water until tender, about 5 minutes. Drain and rinse with cold water.

Season the 2 salmon fillets with salt and pepper. Heat 1 tbsp oil in a pan over medium-high and sear salmon skin-side down until crispy, 4 minutes. Flip and cook 3 minutes more until opaque.

In a small bowl, mix the 3 tbsp mayonnaise and 1 tbsp sriracha. Add water a teaspoon at a time until it's a drizzling consistency.

Slice the 1 cucumber and 4 radishes thinly. Chop the 2 green onions. If using frozen edamame, cook in boiling water for 3 minutes and drain.

Divide the noodles between two bowls. Top with the salmon, cucumber, radishes, edamame, and green onions. Drizzle with the spicy mayo and sprinkle with sesame seeds if you have them.
