Ingredients
- 1.5 lb chicken thighs, boneless skinless, cut into bite-size pieces
- 6 leaf kaffir lime leaves, thinly sliced
- 4 whole red chili peppers, thinly sliced
- 4 whole green chili peppers, thinly sliced
- 4 clove garlic, minced
- 4 whole shallots, thinly sliced

Heat 2 tbsp oil in a large skillet over medium-high. Add 4 sliced shallots and 4 minced garlic cloves; cook until fragrant and golden, about 3 minutes.

Add 1.5 lb chicken pieces; cook until browned on all sides, about 5 minutes. Stir in 4 sliced red and 4 sliced green chilies; cook 2 minutes more.

Add 6 sliced kaffir lime leaves and 1/2 cup water; simmer until chicken is cooked through and sauce thickens slightly, about 5 minutes. Season with salt to taste.
