Ingredients

  • 1 lb shrimp, peeled and deveined
  • ½ cup canned diced tomatoes
  • 2 whole habanero peppers, minced
  • ½ cup guacamole
  • 1 box crackers (saltines or pita chips)
  • 1 whole lime

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high until shimmering, about 60 seconds.

    Add minced habanero and cook 30 seconds until fragrant, stirring constantly so it doesn't burn.

    Add shrimp and cook 2 minutes per side without stirring, until edges turn pink and opaque.

    Pour in diced tomatoes, stir, and simmer 3 minutes until sauce thickens and shrimp is fully cooked.

    Squeeze lime over the pan and season with salt and pepper to taste.
