Spicy Garlic Edamame Stir Fry

Ingredients
- 1 cup edamame, shelled
- ½ lb chicken breast, sliced
- 1 red bell pepper, sliced
- 3 green onions, sliced
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tsp sriracha
- 4 oz rice noodles

Cook the 4 oz rice noodles according to package directions until tender, about 5 minutes. Drain and set aside.

Heat 1 tbsp oil in a large skillet over medium-high. Add the 1/2 lb sliced chicken and cook until browned and cooked through, about 6 minutes. Remove from skillet.

In the same skillet, add 1 tbsp oil, the 1 sliced red bell pepper, and 1 cup edamame. Stir-fry until pepper is crisp-tender, about 4 minutes.

Add the 4 minced garlic cloves and cook until fragrant, about 30 seconds.

Return chicken to skillet. Add the 3 tbsp soy sauce and 2 tsp sriracha. Stir to coat everything, about 1 minute.

Add the cooked noodles and 3 sliced green onions. Toss everything together until well combined and heated through, about 2 minutes. Serve hot, garnished with cilantro if desired.
