Ingredients

  • 8 oz fettuccine
  • 12 oz chicken breast, cut into bite-sized pieces
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese, grated
  • 2 tsp Cajun seasoning
  • 1 tbsp fresh lemon juice

Instructions

    Boil salted water in a large skillet, add fettuccine, cook until al dente, ~9 minutes. Reserve 0.5 cup pasta water, drain.

    Return skillet to medium-high heat with 2 tbsp butter. Season chicken with Cajun seasoning, add to pan, stir frequently until cooked through, ~5 minutes.

    Pour in heavy cream and lemon juice. Stir constantly until simmering, then add grated Parmesan a handful at a time, stirring until melted and glossy.

    Return pasta to skillet with sauce. Toss, adding reserved pasta water a splash at a time until the sauce coats every strand.

    Taste and season with salt and pepper. Serve immediately while hot and creamy.
