Ingredients
- 1 cup sushi rice
- 1.25 cups water
- 2 tbsp rice vinegar
- 1 avocado
- 2 tbsp mayonnaise
- 1 tbsp sriracha

Rinse the 1 cup sushi rice in cold water until the water runs clear, then drain. Combine the rice and 1.25 cups water in a small pot and bring to a boil over high heat.

Reduce heat to low, cover, and simmer until the water is absorbed and the rice is tender, about 15 minutes. Remove from heat and let stand, covered, for 5 minutes.

Fold the 2 tbsp rice vinegar into the hot rice. Spread the rice on a plate to cool slightly while you prepare the toppings.

Slice the 1 avocado in half, remove the pit, and scoop the flesh out. Cut it into thin slices or cubes.

Stir together the 2 tbsp mayonnaise and 1 tbsp sriracha in a small bowl. Serve the rice in a bowl, top with the avocado, drizzle with the spicy mayo, and sprinkle with sliced green onion if you have it.
