Ingredients

  • 1.5 lb lamb shoulder, cut into 1-inch chunks
  • 1 medium yellow onion, cut into 1-inch chunks
  • 2 medium carrots, cut into 1-inch rounds
  • ½ cup dried apricots, halved
  • 2 tsp Moroccan spice blend (cumin, cinnamon, ginger, coriander)
  • 1 cup chicken or vegetable broth
  • 1 tbsp honey

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, about 90 seconds.

    Brown lamb in batches without stirring, 2 minutes per side. Transfer to a plate.

    Add onion and carrot to the skillet, cook 2 minutes, stirring occasionally.

    Stir in spice blend until fragrant, about 30 seconds, then add broth, apricots, honey, and lamb back to the pan.

    Cover and simmer 12 minutes until lamb is tender and vegetables are soft. Season with salt and pepper.

    Serve hot, drizzled with a squeeze of fresh lemon juice and a sprinkle of fresh cilantro if desired.
