Ingredients

  • 1.5 lbs lamb shoulder, cut into 1.5-inch chunks
  • 3 medium carrots, cut into 2-inch pieces
  • 2 cups zucchini, cut into 1.5-inch chunks
  • ½ cup dried apricots, halved
  • 2 tsp moroccan spice blend (cumin, cinnamon, ginger, paprika)
  • 1 cup chicken or vegetable broth
  • 1 tbsp honey

Instructions

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add lamb chunks and sear without stirring for 2 minutes per side until browned. Work in batches if crowded.

    Stir in spice blend and cook 30 seconds until fragrant, then add broth, honey, apricots, and a pinch of salt.

    Add carrots and zucchini, stir once, and cover. Simmer 8–10 minutes until vegetables are tender and lamb is cooked through.

    Taste and adjust salt and pepper. Serve hot in bowls with the broth spooned over.
