Ingredients
- 1.5 lbs lamb shoulder, cut into 1.5-inch chunks
- 3 medium carrots, cut into 2-inch pieces
- 2 cups zucchini, cut into 1.5-inch chunks
- ½ cup dried apricots, halved
- 2 tsp moroccan spice blend (cumin, cinnamon, ginger, paprika)
- 1 cup chicken or vegetable broth
- 1 tbsp honey

Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

Add lamb chunks and sear without stirring for 2 minutes per side until browned. Work in batches if crowded.

Stir in spice blend and cook 30 seconds until fragrant, then add broth, honey, apricots, and a pinch of salt.

Add carrots and zucchini, stir once, and cover. Simmer 8–10 minutes until vegetables are tender and lamb is cooked through.
