Ingredients

  • 1.5 lb boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 1.5 tsp ground cumin
  • 1 tsp smoked paprika
  • ¼ tsp ground cinnamon
  • 1 whole lemon (juiced)

Instructions

    Cut chicken thighs into 1.5-inch cubes. Thread onto metal or soaked wooden skewers, leaving a small gap between pieces.

    Whisk olive oil, cumin, paprika, cinnamon, lemon juice, salt, and pepper in a bowl until smooth.

    Brush the spice mixture generously over all sides of the chicken skewers.

    Heat a grill or grill pan over medium-high until a drop of water sizzles on contact.

    Grill skewers 3–4 minutes per side without moving, until chicken is cooked through and edges are charred.

    Remove from heat and rest 2 minutes. Serve hot with lemon wedges and fresh herbs if desired.
