Ingredients
- 1 lb white fish fillets
- 10 leaves curry leaves
- 1 tsp chili powder
- ½ tsp turmeric
- ½ tsp salt
- 3 tbsp oil

Pat the 1 lb fish fillets dry and cut into 4 pieces. In a small bowl, mix 1 tsp chili powder, 0.5 tsp turmeric, and 0.5 tsp salt. Rub the spice mix all over the fish.

Heat 3 tbsp oil in a large skillet over medium-high heat until shimmering, about 2 minutes. Add the 10 curry leaves and fry until fragrant, about 30 seconds.

Place the fish pieces in the skillet in a single layer. Cook until the bottom is golden and crisp, about 4 minutes.

Flip the fish and cook until the other side is golden and the fish flakes easily with a fork, about 3-4 minutes more. Serve hot with lemon wedges if desired.
