Ingredients

  • 1.5 lbs chicken breast or thigh, cut into 1.5-inch cubes
  • 2 tsp paprika
  • 1.5 tsp ground cumin
  • ½ tsp ground ginger
  • ¼ tsp cayenne pepper
  • 3 tbsp fresh lemon juice
  • 3 tbsp olive oil

Instructions

    Pat chicken dry, then toss with paprika, cumin, ginger, cayenne, lemon juice, olive oil, and a big pinch of salt.

    Thread chicken pieces onto skewers, leaving a tiny gap between each piece so heat circulates evenly.

    Heat a grill or grill pan over medium-high until it shimmers. Let it get very hot, about 2 minutes.

    Sear skewers 3–4 minutes per side without moving until chicken is charred and cooked through (internal temp 165°F).

    Rest on a plate for 2 minutes, then serve hot with lemon wedges and flatbread or over rice.
