Ingredients

  • 1.5 lbs boneless chicken thighs, cut into 1.5-inch cubes
  • 1.5 tsp paprika (sweet or hot)
  • 1 tsp ground cumin
  • ¼ tsp ground cinnamon
  • 1 whole fresh lemon
  • ¼ cup fresh cilantro or parsley, chopped

Instructions

    Toss chicken with paprika, cumin, cinnamon, salt, pepper, 2 tbsp olive oil, and minced garlic. Let sit 10 minutes.

    Thread chicken onto metal skewers, leaving a 1/4-inch gap between pieces for even cooking.

    Heat 1 tbsp olive oil in a 12-inch cast iron skillet over medium-high until it shimmers, about 90 seconds.

    Working in batches if needed, sear skewers 3–4 minutes per side without moving until edges char and thickest piece reads 165°F.

    Squeeze fresh lemon over skewers and scatter cilantro on top.
