Ingredients
- ¾ lb beef sirloin, cut into 0.5-inch cubes
- 1.5 cups long-grain white rice
- 1 large onion, diced
- 3 cups beef or chicken broth
- 1 tbsp cumin seeds
- 4 whole cardamom pods, crushed (or 0.5 tsp ground cardamom)
- 1 tbsp tomato paste
- ¼ cup fresh cilantro or parsley, chopped

Heat 1 tbsp oil in a large skillet over medium-high. Toast cumin seeds and cardamom 30 seconds until fragrant.

Add beef cubes and brown, stirring often, until no pink remains on the outside, ~5 minutes.

Stir in diced onion, cooking 2 minutes until it softens slightly.

Add rice, stirring to coat with oil, then add tomato paste and stir for 1 minute.

Pour in broth, add 0.5 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer 12–15 minutes until rice is tender and liquid is absorbed.
