Ingredients

  • 1 lb beef chuck or sirloin, cut into 1-inch cubes
  • 3 tbsp tahini
  • 1 whole lemon (juiced)
  • 1.5 tsp ground cumin and paprika, mixed
  • 1 cup cooked rice
  • 2 cups mixed vegetables (onion, tomato, cucumber sliced; fresh herbs and grapes)

Instructions

  1. 1

Toss beef cubes with cumin, paprika, salt, pepper, and 1 tbsp olive oil in a bowl.

  2. 2

Heat a grill pan or cast iron skillet over medium-high until smoking, about 2 minutes.

  3. 3

Thread beef onto metal skewers, then sear 2–3 minutes per side without moving. Meat should be deeply browned outside, rare to medium-rare inside.

  4. 4

Whisk tahini, lemon juice, 2 tbsp water, salt, and minced garlic until pourable. Add water as needed.

  5. 5

Warm rice in a small pot or microwave until steaming, about 3 minutes.

  6. 6

Plate rice, arrange skewers on top, surround with onion, tomato, cucumber, fresh herbs, and grapes. Drizzle tahini sauce over everything.
