Ingredients
- 1 lb beef chuck or sirloin, cut into 1-inch cubes
- 3 tbsp tahini
- 1 whole lemon (juiced)
- 1.5 tsp ground cumin and paprika, mixed
- 1 cup cooked rice
- 2 cups mixed vegetables (onion, tomato, cucumber sliced; fresh herbs and grapes)

Toss beef cubes with cumin, paprika, salt, pepper, and 1 tbsp olive oil in a bowl.

Heat a grill pan or cast iron skillet over medium-high until smoking, about 2 minutes.

Thread beef onto metal skewers, then sear 2–3 minutes per side without moving. Meat should be deeply browned outside, rare to medium-rare inside.

Whisk tahini, lemon juice, 2 tbsp water, salt, and minced garlic until pourable. Add water as needed.

Warm rice in a small pot or microwave until steaming, about 3 minutes.
