Ingredients

  • 2 lb potatoes
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 cup tomato sauce
  • 1 tsp red pepper flakes
  • 2 cloves garlic
  • ½ cup mayonnaise
  • 2 tbsp fresh parsley

Instructions

    Preheat oven to 425°F. Cut 2 lb potatoes into 1-inch cubes and toss with 2 tbsp olive oil, 1 tsp smoked paprika, and salt. Spread on a baking sheet.

    Roast potatoes for 25-30 minutes, turning once, until golden and crispy on the outside and tender inside.

    While potatoes roast, make the sauce: heat 1 tbsp olive oil in a small saucepan over medium. Add 2 minced garlic cloves and 1 tsp red pepper flakes, cook until fragrant, about 1 minute.

    Stir in 1 cup tomato sauce and simmer for 5-7 minutes until thickened slightly. Season with salt to taste.

    In a small bowl, mix 0.5 cup mayonnaise with 1 tbsp water to make a drizzling consistency.

    Transfer roasted potatoes to a serving platter. Spoon the tomato sauce over the potatoes, then drizzle with the mayonnaise mixture.
