- 2 lb potatoes
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 cup tomato sauce
- 1 tsp red pepper flakes
- 2 cloves garlic
- ½ cup mayonnaise
- 2 tbsp fresh parsley

Preheat oven to 425°F. Cut 2 lb potatoes into 1-inch cubes and toss with 2 tbsp olive oil, 1 tsp smoked paprika, and salt. Spread on a baking sheet.

Roast potatoes for 25-30 minutes, turning once, until golden and crispy on the outside and tender inside.

While potatoes roast, make the sauce: heat 1 tbsp olive oil in a small saucepan over medium. Add 2 minced garlic cloves and 1 tsp red pepper flakes, cook until fragrant, about 1 minute.

In a small bowl, mix 0.5 cup mayonnaise with 1 tbsp water to make a drizzling consistency.
