Ingredients
- ¾ lb ground chicken
- 24 count wonton wrappers
- 1 tbsp fresh ginger, minced
- 3 count scallions, chopped
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil

Mix ground chicken with ginger, scallions, 1 tbsp soy sauce, and a pinch of salt until just combined.

Place 1 tsp chicken filling in the center of each wonton wrapper. Wet the edges with water, fold into a triangle, then bring the two corners together.

Heat 2 tbsp neutral oil in a large skillet over medium-high until shimmering, about 90 seconds.

Working in batches, pan-fry dumplings flat-side down until golden and crispy, 2-3 minutes without moving.
