20-Min Soy Beef Rice Bowl

Tender ground beef braised in a savory-sweet soy glaze, finished with a soft-boiled egg and served over steamed rice. This is the TikTok shortcut to lu rou fan—no 2-hour braise, same deep umami flavor.

Ingredients

  • 1 lb ground beef
  • ½ large onion, diced small
  • 3 tbsp soy sauce
  • ½ cup beef broth
  • 1 tbsp brown sugar
  • 1 tbsp ginger, minced
  • 2 whole star anise
  • 2 whole eggs

Instructions

  1. 1

Bring a small pot of salted water to a boil. Add eggs and cook for 6 minutes, then transfer to ice water.

  2. 2

Heat oil in a large skillet over medium-high. Brown ground beef, breaking it up with a spoon, until no pink remains, about 5 minutes.

  3. 3

Add diced onion to the beef and cook until soft and translucent, about 2 minutes.

  4. 4

Stir in ginger and cook until fragrant, about 30 seconds.

  5. 5

Pour in soy sauce, broth, brown sugar, and star anise. Simmer uncovered for 4 minutes until glossy and slightly thickened.

  6. 6

Peel and halve the soft-boiled eggs. Divide rice between bowls, top with beef mixture, and crown with egg halves.
