Ingredients

  • 2 chops pork chops (1-inch thick, 2 chops)
  • 1 medium yellow onion, sliced thin
  • 8 oz mushrooms, sliced
  • 1 cup beef or chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch

    Pat pork chops dry and season generously with salt and black pepper on both sides.

    Heat 2 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Sear pork chops 4 minutes per side without moving until golden brown. Transfer to a plate.

    In the same skillet, cook onion and mushrooms until soft and caramelized, stirring often, 5 minutes.

    Whisk cornstarch with 2 tbsp cold water. Pour broth and soy sauce into skillet, stir in cornstarch slurry.

    Nestle pork chops back into the gravy, cover, and simmer until chops are cooked through, about 4 minutes.
