Ingredients
- 12 oz duck breast, smoked (or rotisserie duck)
- 1 medium yellow onion, thinly sliced
- 1 tbsp cajun seasoning
- 2 large eggs
- 2 slices bread (crusty sourdough or white)
- 2 tbsp white vinegar

Heat 1 tbsp oil in a skillet over medium-high. Add onions with cajun seasoning and salt, stirring occasionally for 5 minutes.

Pour vinegar into the pan and toss. Remove onions to a plate, set aside.

Toast bread in the same skillet until golden brown, about 90 seconds per side.

Sear duck slices skin-side down for 2 minutes until crispy. Flip and warm through for 1 minute.
