Ingredients

  • 12 oz duck breast, smoked (or rotisserie duck)
  • 1 medium yellow onion, thinly sliced
  • 1 tbsp cajun seasoning
  • 2 large eggs
  • 2 slices bread (crusty sourdough or white)
  • 2 tbsp white vinegar

Instructions

    Heat 1 tbsp oil in a skillet over medium-high. Add onions with cajun seasoning and salt, stirring occasionally for 5 minutes.

    Pour vinegar into the pan and toss. Remove onions to a plate, set aside.

    Toast bread in the same skillet until golden brown, about 90 seconds per side.

    Sear duck slices skin-side down for 2 minutes until crispy. Flip and warm through for 1 minute.

    Crack eggs into the skillet and fry until whites set but yolks still jiggle, about 3-4 minutes.

    Top each toast with duck slices, a fried egg, and a pile of cajun onions. Serve immediately.
