Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 medium bell peppers (red, yellow, or orange), cut into strips
  • 1 medium yellow onion, sliced into strips
  • 1.5 tbsp chili powder
  • 1 tsp cumin
  • 1 whole lime
  • 6 count flour or corn tortillas, warmed

Instructions

    Pat shrimp dry. Toss with chili powder, cumin, salt, and pepper in a bowl.

    Heat 2 tbsp oil in a large skillet over high heat until just starting to smoke, 2 minutes.

    Add peppers and onions. Cook without stirring for 3 minutes until edges char and soften slightly.

    Push vegetables to the side. Add shrimp to the center and cook 2 minutes per side until pink and opaque.

    Toss everything together. Squeeze lime juice over the top and taste for salt.

    Divide mixture among warm tortillas and serve immediately.
