Ingredients

  • ¼ cup lime juice
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1.5 pounds beef flank or skirt steak
  • 2 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 large yellow onion, sliced
  • 2 tablespoons olive oil
  • 1 pinch salt and pepper
  • 8 tortillas flour or corn tortillas, warmed
  • ½ cup sour cream
  • ¾ cup guacamole
  • ¾ cup salsa
  • ¼ cup fresh cilantro, chopped
  • 1 lime lime wedges

Instructions

    In a small bowl, whisk together lime juice, 3 tablespoons olive oil, minced garlic, cumin, chili powder, salt, and black pepper to make the marinade.

    Slice the beef flank steak against the grain into 0.25-inch thick strips.

    Place beef strips in a shallow dish or zip-top bag and pour marinade over. Toss to coat evenly. Let sit for 15 minutes at room temperature, or up to 4 hours in the refrigerator.

    Slice the bell peppers and onion into 0.25-inch thick strips.

    Heat a 12-inch cast iron skillet over medium-high heat until very hot, about 2 minutes.

    Working in batches if needed, add half the beef to the skillet in a single layer. Cook without stirring for 2-3 minutes until browned. Flip and cook another 2 minutes. Transfer to a plate and repeat with remaining beef.

    In the same skillet, add 2 tablespoons olive oil. Add peppers and onion, season with salt and pepper. Cook, stirring occasionally, for 5-7 minutes until softened and lightly charred.

    Return cooked beef to the skillet with vegetables, toss gently, and cook for 1 minute to warm through. Keep the skillet on a trivet at the table for presentation.

    Warm tortillas by wrapping in a damp kitchen towel and microwaving for 1 minute, or warming them directly over a gas flame or in a dry skillet.

    Serve fajita mixture sizzling in the skillet with warm tortillas and toppings (sour cream, guacamole, salsa, cilantro, lime wedges) on the side for guests to build their own.
