Ingredients

  • 1.5 lbs flank or skirt steak
  • 3 tbsp lime juice
  • 3 tbsp olive oil
  • 3 cloves garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 peppers bell peppers (red, yellow, green), sliced
  • 1 medium yellow onion, sliced
  • 2 tbsp olive oil
  • 8 count flour tortillas
  • ½ cup sour cream
  • ¼ cup fresh cilantro, chopped
  • 2 count lime wedges
  • ¾ cup salsa
  • ½ cup shredded cheddar cheese

Instructions

    Combine lime juice, 3 tbsp olive oil, minced garlic, cumin, chili powder, salt, and pepper in a bowl.

    Place steak in a shallow dish and coat evenly with marinade. Let sit for 15 minutes at room temperature.

    Slice bell peppers and onion into thin strips. Warm tortillas in a dry skillet over medium heat, about 30 seconds per side.

    Heat a 12-inch cast iron skillet over medium-high heat until very hot, about 2 minutes.

    Remove steak from marinade and cook for 4–5 minutes per side for medium-rare. Transfer to a cutting board and rest for 5 minutes.

    In the same skillet, add 2 tbsp olive oil. Sauté peppers and onions for 5–7 minutes, stirring occasionally, until tender and lightly charred.

    Slice steak against the grain into thin strips.

    Arrange warm tortillas on a serving platter. Top each with a portion of steak and pepper-onion mixture.

    Serve with sour cream, salsa, cheese, cilantro, and lime wedges on the side for garnish.
