Ingredients

  • 14 oz firm tofu, pressed
  • 4 cups vegetable broth
  • 4 cloves garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp white vinegar
  • 3 cups fresh spinach or bok choy, chopped
  • 2 scallions scallions, sliced

Instructions

    Heat 1 tbsp oil in a pot over medium. Add garlic and ginger, cook 60 seconds until fragrant.

    Pour in broth, soy sauce, and vinegar. Bring to a gentle simmer over medium-high heat.

    Cut tofu into 1/2-inch cubes. Add to broth and simmer gently for 5 minutes without stirring.

    Stir in spinach or bok choy. Cook 1 minute until just wilted and bright green.

    Taste and adjust salt or vinegar as needed. Ladle into bowls and top with scallions.
