Ingredients
- 14 oz firm tofu, pressed
- 4 cups vegetable broth
- 4 cloves garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 2 tbsp soy sauce
- 1 tbsp white vinegar
- 3 cups fresh spinach or bok choy, chopped
- 2 scallions scallions, sliced

Heat 1 tbsp oil in a pot over medium. Add garlic and ginger, cook 60 seconds until fragrant.

Pour in broth, soy sauce, and vinegar. Bring to a gentle simmer over medium-high heat.

Cut tofu into 1/2-inch cubes. Add to broth and simmer gently for 5 minutes without stirring.

Stir in spinach or bok choy. Cook 1 minute until just wilted and bright green.
