Ingredients
- 2 cups ricotta cheese
- 1 cup powdered sugar
- 1 cup candied fruit mix
- 1 loaf pound cake or sponge cake
- 2 drops green food coloring
- ½ cup almonds
- ½ cup pistachios
- ½ cup white chocolate chips

In a bowl, mix the 2 cups ricotta and 1 cup powdered sugar until smooth. Fold in 1 cup candied fruit, then chill the filling for 15 minutes.

Slice the pound cake into 1/2-inch thick slices. Line a 9-inch round bowl or mold with plastic wrap, then press the cake slices inside, covering the bottom and sides completely.

Spoon the chilled ricotta filling into the cake-lined mold, pressing it down evenly. Top with remaining cake slices to cover, then refrigerate for 30 minutes until firm.

In a small bowl, mix 1 cup powdered sugar with 2-3 tablespoons water and 2 drops green food coloring to make a thick icing. Stir until smooth and spreadable.

Unmold the cassata onto a serving plate. Spread the green icing over the top and sides, smoothing with a spatula.

Melt the 0.5 cup white chocolate chips in the microwave in 20-second bursts, stirring until smooth. Drizzle over the icing.

Sprinkle the 0.5 cup almonds and 0.5 cup pistachios over the top. Chill for 10 minutes before slicing and serving.
