Ingredients
- 2 medium zucchini
- ½ lb shrimp, peeled and deveined
- ½ cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp olive oil
- ½ tsp salt

Spiralize the 2 medium zucchini into noodles and set aside. Pat the 1/2 lb shrimp dry with paper towels.

Heat 1 tbsp olive oil in a large skillet over medium-high. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp to a plate.

Reduce heat to medium. Add 2 minced garlic cloves and cook until fragrant, about 30 seconds. Pour in 1/2 cup heavy cream and 1/2 tsp salt, stirring until slightly thickened, about 2 minutes.

Add the zucchini noodles and cooked shrimp back to the skillet. Toss gently with tongs until the noodles are coated and just warmed through, about 2 minutes. Serve immediately.
