Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 1 medium carrot, sliced
  • 1 cup snow peas
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil

Instructions

    Heat 2 tbsp vegetable oil in a large skillet or wok over high heat until shimmering, about 1 minute.

    Add 1 lb shrimp in a single layer and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.

    Add 2 cups broccoli, 1 sliced carrot, and 1 cup snow peas to the skillet. Stir-fry until crisp-tender, about 4-5 minutes.

    Return shrimp to the skillet, add 3 tbsp soy sauce, and toss everything together until well coated and heated through, about 1-2 minutes.
