Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 14 oz canned diced tomatoes
  • ¾ cup feta cheese, crumbled
  • 3 clove garlic, minced
  • ¼ cup dry white wine
  • 2 tsp fresh oregano (or 1 tsp dried)

Instructions

    Heat 2 tbsp olive oil in a large skillet over medium-high until shimmering, about 1 minute.

    Add garlic and cook 30 seconds until fragrant, then add tomatoes, wine, and oregano.

    Simmer sauce 3 minutes, then season with salt and pepper to taste.

    Stir in shrimp and cook 2 minutes per side until pink and opaque throughout.

    Scatter feta evenly over the pan and remove from heat, letting cheese soften 1 minute.
