Ingredients

  • 200 g wide rice noodles
  • 250 g large shrimp, peeled
  • 2 piece eggs
  • 120 g Chinese broccoli
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 3 piece garlic cloves
  • 3 tbsp vegetable oil

Instructions

    Soak noodles in warm water 20 minutes until pliable, then drain. Mix dark soy sauce, oyster sauce, fish sauce, and sugar in a small bowl.

    Heat oil in a wok over high heat until smoking. Add shrimp and stir-fry 2 minutes until pink. Remove and set aside.

    Add garlic and broccoli to the wok and stir-fry 1 minute. Push to one side and scramble eggs in the cleared space.

    Add noodles and pour sauce over. Toss everything together vigorously for 2 minutes until noodles absorb sauce and char slightly. Return shrimp and toss once more.
