Ingredients
- 1 cup sushi rice
- 1.25 cups water
- 2 tbsp rice vinegar
- 1 tsp sugar
- ½ tsp salt
- 8 large cooked shrimp

Rinse the 1 cup sushi rice in cold water until the water runs clear, then drain well.

Combine the rice and 1.25 cups water in a saucepan. Bring to a boil, then cover, reduce heat to low, and simmer until the water is absorbed and the rice is tender, about 15 minutes.

In a small bowl, mix the 2 tbsp rice vinegar, 1 tsp sugar, and 0.5 tsp salt until dissolved. Fold this into the hot rice and let it cool to room temperature.

Wet your hands with water, then shape about 2 tbsp of rice into a small oval. Place one cooked shrimp on top and press gently to secure.

Serve the nigiri with wasabi and pickled ginger on the side, if desired.
