Ingredients
- 1 pound shrimp, peeled and deveined
- 2 tablespoons red curry paste
- 2 tablespoons fish sauce
- 3 tablespoons lime juice
- 2 cups water
- 2 whole green chilies, sliced

In a pot, bring 2 cups water to a boil over high heat. Stir in 2 tbsp red curry paste and 2 tbsp fish sauce until dissolved, about 2 minutes.

Add 1 lb shrimp and 2 sliced green chilies. Cook over medium heat until shrimp turn pink and opaque, about 4-5 minutes.

Remove from heat and stir in 3 tbsp lime juice. Taste and add more lime or fish sauce if needed. Serve hot, garnished with cilantro if desired.
