Ingredients
- ½ lb shrimp
- 3 cups cooked rice
- 2 cups frozen french fries
- 2 large eggs
- 2 tbsp soy sauce
- 3 tbsp vegetable oil
- 2 tbsp sriracha
- 2 tbsp mayonnaise

Cook the 2 cups frozen french fries according to package directions until crispy and golden, about 20 minutes in a 425°F oven.

While fries cook, heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add 0.5 lb shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.

In the same skillet, add 1 tbsp vegetable oil. Push shrimp to one side, pour in 2 beaten eggs, and scramble until just set, about 1 minute.

Add 3 cups cooked rice to the skillet, breaking up clumps. Stir-fry for 3-4 minutes until rice is heated through and slightly toasted.

Return shrimp to the skillet. Add 2 tbsp soy sauce and stir-fry for 1-2 minutes until everything is well coated and hot.

Serve the fried rice topped with crispy french fries. Drizzle with 2 tbsp sriracha and 2 tbsp mayonnaise before serving.
