Ingredients

  • 2 packages instant yakisoba noodles
  • 10 oz shrimp, peeled and deveined
  • ½ medium yellow onion, thinly sliced
  • 3 tbsp soy sauce
  • 1.5 tbsp cornstarch
  • ¾ cup water

    Cook yakisoba noodles in boiling water for 3 minutes until tender, then drain and pat dry.

    Heat 2 tbsp neutral oil in a large skillet over medium-high until shimmering, about 1 minute.

    Spread noodles flat in the skillet and let cook undisturbed for 3–4 minutes until edges crisp and golden.

    Push noodles to the side; add shrimp and onion to the open space and cook for 2 minutes until shrimp start to pink.

    Whisk soy sauce, cornstarch, and water together, then pour over noodles and shrimp.

    Toss everything together and cook for 1–2 minutes until sauce thickens and coats the noodles.
