Ingredients
- 1 pound shrimp, peeled and deveined
- 1.5 pounds potatoes, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 14.5 ounces diced tomatoes
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon salt

Heat the 2 tbsp olive oil in a large pot over medium heat. Add the 1 chopped onion and cook until soft, about 5 minutes.

Stir in the 3 minced garlic cloves and 1 tsp paprika, cooking until fragrant, about 1 minute.

Add the 14.5 oz diced tomatoes and 1.5 lbs diced potatoes. Pour in 2 cups water and bring to a boil.

Reduce heat to low, cover, and simmer until potatoes are tender, about 15 minutes.

Season with 1 tsp salt, then add the 1 lb shrimp. Cook until shrimp are pink and opaque, about 3-4 minutes.
