Ingredients

  • 8 oz vermicelli noodles
  • ½ lb shrimp, peeled and deveined
  • ½ lb pork, thinly sliced
  • 1 cup green beans, trimmed
  • 1 medium onion, sliced
  • 3 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tsp sugar

Instructions

  1. 1

Soak the 8 oz vermicelli noodles in hot water until soft, about 10 minutes, then drain and set aside.

  2. 2

Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add the 0.5 lb shrimp and stir-fry until pink and just cooked, about 2-3 minutes. Remove and set aside.

  3. 3

Add the remaining 1 tbsp oil to the pan. Add the 0.5 lb pork and stir-fry until browned and cooked through, about 4-5 minutes.

  4. 4

Add the 1 cup green beans and 1 sliced onion to the pan. Stir-fry until the beans are bright green and tender-crisp, about 3-4 minutes.

  5. 5

Return the shrimp to the pan. Add the drained noodles, 3 tbsp soy sauce, and 1 tsp sugar. Toss everything together over high heat until well combined and heated through, about 2 minutes. Serve hot.
