Ingredients
- 1 lb shrimp, peeled and deveined
- 3 cups broccoli florets
- 1 medium carrot, sliced
- 1 medium yellow bell pepper, sliced
- 3 tbsp soy sauce
- 4 sheets wonton wrappers, cut into strips

Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add the 4 wonton wrapper strips and fry until golden and crispy, about 1-2 minutes. Remove and set aside on a paper towel.

In the same skillet, add the 1 lb shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.

Add the 3 cups broccoli florets, 1 sliced carrot, and 1 sliced yellow bell pepper to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp and bright in color.

Return the shrimp to the skillet. Add the 3 tbsp soy sauce and toss everything together for 1 minute until well coated and heated through.
