Ingredients
- 1 lb shrimp
- 1 medium cucumber
- 3 medium lime
- 2 medium serrano chili
- ½ medium red onion
- ½ cup cilantro

Peel and devein the 1 lb shrimp, then slice them in half lengthwise. Place in a bowl and cover with the juice of 3 limes and 1 tsp salt. Let sit for 10 minutes until the shrimp turn pink and opaque.

Thinly slice the 1 cucumber and 0.5 red onion. Add to the shrimp along with the 2 serrano chilies (sliced) and 0.5 cup cilantro leaves. Toss to combine.

Serve immediately, spooning extra lime juice over the top. Add more chili if you like it spicier.
