Ingredients

  • 1.5 cups all-purpose flour
  • 2 large eggs
  • ⅓ cup butter, softened
  • ½ cup granulated sugar
  • 8 whole plums (fresh), halved and pitted
  • ¼ cup brown sugar mixed with cinnamon
  • 3 whole whole pears and apples (for serving)

Instructions

    Preheat oven to 375°F. Line a sheet pan with parchment and lightly butter it.

    Whisk flour with 1 tsp baking powder and a pinch of salt in a bowl.

    Beat softened butter and sugar until fluffy, ~2 minutes. Add eggs one at a time, beating well after each.

    Fold flour mixture into egg mixture until no streaks remain. Spread batter evenly onto the prepared sheet pan.

    Arrange plum halves skin-side up across the batter. Sprinkle brown sugar–cinnamon mixture evenly over top.

    Bake 18–22 minutes until golden and a toothpick inserted in cake comes out clean. Cool 5 minutes before slicing.
