Ingredients
- 1.2 lbs beef sirloin or ribeye steak
- 12 oz baby potatoes, halved
- 8 oz carrots, cut into 2-inch pieces
- 8 oz broccoli florets
- ½ cup beef stock
- 1 tbsp Worcestershire sauce

Pat beef dry with paper towels. Season generously with salt and pepper on both sides.

Heat oil in a large skillet over medium-high until it shimmers. Sear beef 2 minutes per side without moving—don't flip repeatedly.

Toss potatoes, carrots, and broccoli with olive oil, salt, and pepper. Spread them on a sheet pan with the seared beef on top.
