Ingredients

  • 1.2 lbs beef sirloin or ribeye steak
  • 12 oz baby potatoes, halved
  • 8 oz carrots, cut into 2-inch pieces
  • 8 oz broccoli florets
  • ½ cup beef stock
  • 1 tbsp Worcestershire sauce

Instructions

    Pat beef dry with paper towels. Season generously with salt and pepper on both sides.

    Heat oil in a large skillet over medium-high until it shimmers. Sear beef 2 minutes per side without moving—don't flip repeatedly.

    Toss potatoes, carrots, and broccoli with olive oil, salt, and pepper. Spread them on a sheet pan with the seared beef on top.

    Roast at 425°F for 10 minutes until beef reaches 130°F internal temp (rare-medium) and vegetables are tender.

    Transfer beef to a cutting board to rest 5 minutes. Return pan to stovetop, add beef stock and Worcestershire, scrape up browned bits.

    Simmer gravy 2 minutes until it coats the back of a spoon. Slice beef, plate with vegetables, and drizzle with gravy.
