Ingredients
- 2 steaks (8 oz each) beef sirloin or ribeye steak, 1 inch thick
- 1 lb small waxy potatoes, halved
- ¾ lb rainbow carrots, cut into batons
- 8 oz broccolini, stems trimmed
- 8 pieces frozen Yorkshire puddings (or 4 homemade)
- 1 cup beef broth
- 1 tbsp balsamic vinegar

Pat beef dry with paper towels. Season both sides generously with salt and black pepper.

Heat olive oil in a large skillet over high heat until smoking. Sear beef 90 seconds per side without moving — center should stay medium-rare.

Transfer beef to a plate. Toss potatoes and carrots with oil, salt, and pepper on a sheet pan. Roast at 400°F for 12 minutes.

Add broccolini to the pan, toss, and return to oven for 3 minutes. Meanwhile, heat Yorkshire puddings per package.
