Ingredients

  • 2 steaks (8 oz each) beef sirloin or ribeye steak, 1 inch thick
  • 1 lb small waxy potatoes, halved
  • ¾ lb rainbow carrots, cut into batons
  • 8 oz broccolini, stems trimmed
  • 8 pieces frozen Yorkshire puddings (or 4 homemade)
  • 1 cup beef broth
  • 1 tbsp balsamic vinegar

Instructions

  1. 1

Pat beef dry with paper towels. Season both sides generously with salt and black pepper.

  2. 2

Heat olive oil in a large skillet over high heat until smoking. Sear beef 90 seconds per side without moving — center should stay medium-rare.

  3. 3

Transfer beef to a plate. Toss potatoes and carrots with oil, salt, and pepper on a sheet pan. Roast at 400°F for 12 minutes.

  4. 4

Add broccolini to the pan, toss, and return to oven for 3 minutes. Meanwhile, heat Yorkshire puddings per package.

  5. 5

Pour broth into the skillet you used for beef, scraping up browned bits. Stir in balsamic vinegar and simmer for 2 minutes until glossy.

  6. 6

Slice beef against the grain. Plate beef, vegetables, Yorkshire puddings, and drizzle gravy over everything.
