Ingredients
- 1 lb boneless chicken thighs
- 12 oz small potatoes, halved
- 1 whole lemon (zested + juiced)
- 3 cloves garlic, minced
- ½ cup Greek yogurt
- 2 pieces flatbread (naan or pita)
- ½ cup hummus
- 3 tbsp fresh herbs (oregano, dill, or parsley, chopped)

Heat broiler to high. Cut chicken into 1.5-inch chunks and thread onto skewers with potatoes alternating.

Toss skewers and any loose potatoes with 2 tbsp oil, lemon zest, 1 tbsp minced garlic, salt, and pepper on a sheet pan.
