Ingredients

  • 1 lb boneless chicken thighs
  • 12 oz small potatoes, halved
  • 1 whole lemon (zested + juiced)
  • 3 cloves garlic, minced
  • ½ cup Greek yogurt
  • 2 pieces flatbread (naan or pita)
  • ½ cup hummus
  • 3 tbsp fresh herbs (oregano, dill, or parsley, chopped)

Instructions

    Heat broiler to high. Cut chicken into 1.5-inch chunks and thread onto skewers with potatoes alternating.

    Toss skewers and any loose potatoes with 2 tbsp oil, lemon zest, 1 tbsp minced garlic, salt, and pepper on a sheet pan.

    Broil 12–14 minutes, shaking pan halfway through, until chicken edges char and potatoes soften.

    Stir yogurt with remaining 2 cloves garlic, lemon juice, and 1 tbsp herbs. Season with salt and pepper.

    Toast flatbread under the broiler 60 seconds per side until warm and lightly charred.

    Plate skewers, potatoes, flatbread, hummus, and yogurt sauce. Sprinkle remaining herbs over chicken.
