Ingredients
- 1 lb lamb shoulder or leg, cut into 1.5-inch cubes
- 8 oz fresh okra, whole
- 3 tbsp olive oil
- 1 whole lemon (juiced + zested)
- 1.5 tsp dried oregano
- 3 clove garlic, minced

Preheat oven to 425°F. Toss lamb cubes with 2 tbsp oil, lemon zest, oregano, garlic, salt, and pepper in a bowl.

Spread lamb on a sheet pan in a single layer. Roast for 8 minutes until edges start to brown.

Toss okra with remaining 1 tbsp oil, salt, and pepper. Push lamb to the sides and add okra to the pan.

Roast together for 6–7 minutes until okra is tender and charred and lamb is cooked through.
