Ingredients
- 1.25 lb lamb chops (rib or loin)
- ½ lb chorizo sausage, sliced into 1/2-inch rounds
- 1 lb frozen french fries
- 3 tbsp olive oil
- 1 whole lime
- 3 cloves garlic, minced
- 1 tsp dried oregano

Preheat oven to 425°F. Toss fries with 1 tbsp oil, salt, and pepper on a sheet pan. Spread in a single layer.

Pat lamb chops dry. Season generously with salt, pepper, and oregano on both sides.

Roast fries for 12 minutes. Push them to the sides of the pan to make room for the meat.

Drizzle lamb and chorizo with remaining 2 tbsp oil. Add to the pan with the minced garlic; season again.

Roast for 10–12 minutes, stirring fries halfway through. Lamb should be pink inside, chorizo edges crisped.

Squeeze lime over everything. Serve hot directly from the pan.
